
Marble Shortbread
1.5 cups sugar
3/4 tsp salt
3 cups butter
1 tsp vanilla
4.5 cups flour
1.5 cups rice flour
1 cups chocolate chips
In a mixer at medium speed blend the sugar, salt and butter. Once smooth and blended for at least 2 minutes, add the vanilla and mix. Now add the flour, and rice flour. Mix for about 8 minutes, slow at first and then on medium. The long mixing time is important for the cookie to be flakey.
Take out about 1 cup of batter and set aside. Melt 1 cup of chocolate chips in microwave, then, once cooled add to the cup of batter and mix. Now take this new mixture and fold into batter.
Bake at 350 until light brown around the edges.
